Engagement Cake

I love making cakes. There is something so special about the reaction people have when they see a cake I've made that makes me want to make a cake for every occasion! I've been too busy with work and school to actually do so, but now that I am working a little bit less, I hope to decorate a lot more. This one I love so much. I was so excited how great it looked and how well it held up (it was my first 2 tiered cake). I know why three tiers for an engagement cake? Go big or go home right? ;)

Cupcakes with a surprise inside!

Cupcakes with Cadbury eggs inside!

I saw a photo of this posted on Facebook and knew I had to try it! The recipe I saw used regular sized cupcakes with the large Cadbury eggs. I decided to make mini cupcakes instead with the mini Cadbury eggs to save money.

This is what you'll need.

  • 1 Chocolate Duncan Hines Cake Mix (and the ingredients on the box for that)
  • 2 packs of the mini Cadbury Eggs,
  • Frosting! I used Ducan Hine's frosting Creations for the white frosting.
  • The pink frosting was actually royal icing and the recipe can be found here!
  • Wilton's icing bags!
  • Wilton's Lemon Yellow Icing Color, and Pink Rose Icing Color
  • Tips from Wilton = 1M (yellow cupcakes),  2D (white cupcakes), and I believe the last one was tip 125 (pink cupcakes.
  • Cupcake pan (I made mini and regular sized cupcakes)
  • Cupcake liners - I purchased mine from thebakersconfections
  • Pearl like sprinkles. I purchased mine at Ross.
All you need to do is make the mix like it is instructed on the box. Fill the cupcake liners 1/2-3/4 full. Push a mini Cadbury egg into the center. Bake as instructed on the box. I believe the mini ones were baked for about 12 minutes.

Once it's cooling start make the royal icing. Dye with Wilton's icing colors. I chose easter colors! Put a tip in the bag. Then decorate!  ( I used royal icing, because my assistant (aka mom) made that instead of buttercream. The royal icing, despite my hesitations, came out great.

It was soooo good, and it received a lot of compliments.

How to video on how I did the frosting!

A wedding planning, photo taking, cake planning post!

When it comes to the whole planning a wedding thing, I'm a bit behind. I feel like I'm at a standstill. Part of the reason is school and procrastination. Part if it may be my sadness over this whole who's gonna marry us thing. Last post, I briefly mentioned going to the paster and asking him if he could marry us. He said yes. When we went to church on Sunday he told us he didn't realize that they were going to leave on vacation that day. I was devastated. It hurt... a lot. I took it for granted, so when I found out, I was crushed. It was something that I didn't think I would have to worry about. Is it good luck when so many things go wrong during the wedding process?

Ahh pigeons.
Yeah, pigeons. I'm in an animal based photo class right now. I couldn't think of anything extraordinary to do other then street photography for my semester long project. That was sort of a bust. I started to follow pigeons and something interesting is coming out of it. I feel so stupid that I am the pigeon lady. The crazy person you always pass by that is interacting with them. I take photos and Joe feeds them. It's kind of silly, but kind of fun too. It's interesting to start to care about an animal when I haven't really been close to any before. I mean the closest was a bird that died soon after we even got him when I was like 6. I don't really count him or our fish. Pigeons are also something that Chicago natives ignore and think of as rats with wings. I am going to attempt to explore them. Giving them a comical human humor. I also am going to try and create some aesthetically pleasing picture that involve their feathery little bodies. I'll give you a sneak peak soon.

This weekend I am going to create a cake for my grandparent's 50th anniversary. Can you believe it?! 50 years. That's fantastic. This photo below is my inspiration for the cake. It will be two layers, made up of carnations instead of roses with a giant 50 on top. I don't normally like cake toppers, but this one will do. A traditional sort of cake. I'm excited to do something for them. I don't like the gold little balls, so I am thinking a traditional buttercream border. I can't decide if it should be gold or white...maybe white. It's a little more traditional.

This is my sketch. haha.

Other then that no other updates. I have a doctor's appointment tomorrow.... I hate doctors, they terrify me.

CAKE!

I love making cakes! It gives me a huge satisfaction to see the end result.
An even bigger satisfaction is to see people's reactions!
It also helps too when I see them eat the cake without stopping or saying
a word until the end. Although I can't take much credit for the taste,
I can take credit, along with my mom, for the look.

I made this cake last weekend for my cousin's birthday as a request from my aunt.

Cake!

Oh my. I am all caked out, but in a good way!

My mom and I made 120 cupcakes on Friday for a bridal shower that we went to on Saturday. I guess you can say it was my first big job. It took us all day. Literally. It was fun though and the end results really payed off. I forgot to take a video of it, but I did take lots of pictures. I made like 4 or 5 different frosting designs and added blue flowers to make everything pop!

Today, after getting home from celebrating a birthday, I decided to make cake pops. I had the urge to also make a cake too so Minnie Mouse popped into my head. Below is a video describing what I used and briefly how I did it. It was so much fun! I did it all myself and will donate it to my new taste testers (aka my mom's coworkers). hahaha.
